Over the past two years Steyn’s company has installed more than 30 cheese, yoghurt and maas processing plants on the continent. Recipes for the cheeses, as well as cultures and stabilisers, are supplied by Fruimark.
The price of an installation, depending on the scale and level of sophistication, ranges from $20,000 to $200,000.The zambian operation, installed for Halalwi Holdings, is geared to pasteurise reconstituted powdered milk in batches of 200 to 800 litres – up to three batches per day. Besides a pasteuriser, other equipment needed is an ice bank, a fermentation station and a coldroom with a compressor and evaporator.
Fresh milk is not always readily available in some African states, says Steyn, but where it is, Fruimark supplies equiment to process it.
The company undertakes installation, training and technical back- up anywhere in Africa. Help with sourcing of products like bottles, cups and labels is also provided.
