Hand-operated pie lidder

A manufacturer of a pie lidder has brought out redeveloped equipment which is ideally suited for the African market, being rugged, maintenance free and hand-operated (needs no electricity). It also costs considerably less thanany other available pie lidder.

The 2003 Universal Lidder, patented by South African company Pie Designs & Solutions, is manufactured from stainless steel and aerospace plastics, replacing a previous aluminium model which has been on the market for over ten years. At around $700, the new machine costs less than second hand conventional equipment.
Besides being nearly indestructible and hand-operated, the lidder has a number of other unique features:

  • A fool-proof sealing process that prevents pies from opening, thus reducing wastage. No egg or water washing is needed to enhance sealing, eliminating an entire production process.
  • Interchangeable tooling for any shape of pie, including foil-less pies and large tarts. Pie dies can be custom tailored to meet individual needs.
  • Pies can be produced from all types of pastry. Production is economical with crusts as thin as 2,5mm – 3mm. High quality pies with a narrow 5mm crust are produced consistently.
  • Trims excess pastry around pie edges automatically.
  • A built-in pie ejector improves operational efficiency and production.
  • A multi-service tool is supplied with every machine. This includes a bottle opener, fish scaler and spanners.
  • It is maintenance free and transportable.
    The machine has a high production capacity. An outlet in Port Elizabeth, for example, produces up to 9,000 pies a day on one machine (translating into a pie every 4,25 seconds).The lidder is being used, amongst others, by King Pie Holdings, one of South Africa’s largest pie franchises.
